Aging: spontaneous fermentation on the skins, 14-18 days of maceration, 12-14 months in small oak barrels
Wine description: Herbal spice (black pepper, marjoram, bay leaf and allspice), ripe blackberries and some soy sauce, elegant acidity with lots of density and complexity with hints of vanilla and salted caramel
